Robb Walsh's 100 Favorite Houston Dishes: #66 Boudin Kolaches at Shipley's on North Main
Over the course of the next few months, I'm counting down 100 of my favorite Houston dishes. I chose some because they are such quintessential Houston creations, others for their cultural or historical significance, and others because they are just so damn tasty. #66 Boudin Kolaches at Shipley's on North Main
Spicy pork filling on the inside, moist sweet dough bun on the outside -- a boudin kolache and a hot cup of coffee is as good as a Houston breakfast gets. The combination of Cajun boudin and Czech kolaches staggers the imagination. I imagine the Genesis story must start with something like: "So Boudreaux and Katarina got married and opened a bakery..."
Boudin kolaches are available at the Shipley's at North Main, but only on the weekend. (I brought my own Katz's Bayou Blend coffee in a car thermos.) Be forewarned, they usually sell out before 10 a.m.
Our correspondents report that boudin kolaches have long been available in Lake Charles, Louisiana (at Delicious Donuts on Country Club and Happy Donut on Ryan, among other places.) And they are also available in a couple of other kolache shops around Houston, including the one at West Rd. and N. Eldridge.
