This week on Pinterest, I couldn't stop pinning recipes pertaining to Thanksgiving and the holidays. With Thanksgiving on Thursday and Christmas right around the corner, I thought it would be fitting to have a holiday-themed treat as the Pinterest recipe of the week.
I can never turn down a dessert during the holidays, so I found a different pumpkin dessert recipe that's simple to make and looks gorgeous once it is complete. Food has to look good when it's served during the holidays.
These pumpkin parfaits take less than 30 minutes to make and assemble. Thanks to this blogger, we can all have a pumpkin dessert that takes a small amount of time and tastes delicious.

First, pour one package of gelatin over 1/4 cup of cold water in a small saucepan. Let the gelatin mixture sit for one minute, then place the pot on the stove and heat until it barely simmers.
Meanwhile, make the pumpkin mousse in a large bowl. Mix together 1/2 cup of brown sugar, one 15-ounce can of pure pumpkin, 1/2 teaspoon each of nutmeg and cinnamon, 1/4 teaspoon of ground ginger and 1/8 teaspoon of salt.
Once the gelatin mixture simmers, pour the gelatin mixture into the pumpkin mixture. Set this bowl aside and begin to make the whipped cream.
The first batch of whipped cream will be folded into the pumpkin mixture. So, whip 1 cup of chilled heavy whipping cream and 1/2 teaspoon of vanilla extract until small peaks form.
Fold this batch of whipped cream into the pumpkin mixture delicately. Set the bowl aside once the whipped cream and pumpkin are completely mixed together.
Next, whip 1 1/4 cups of chilled heavy whipping cream and one teaspoon of vanilla extract until soft peaks are formed again.
Now you're ready to assemble your parfaits. I am a college student; therefore, I do not have parfait glasses, but if you have them, use them. If you don't, then use clear glasses.
First, make one layer of pumpkin mousse, followed by crushed gingersnap cookies and a layer of whipped cream. Repeat these layers, ending with whipped cream. Add some more crushed gingersnap cookies and stick one whole gingersnap cookie on top. You can add walnuts for a little more crunch in the parfait, or top off the whipped cream with a little extra cinnamon.
Serve these for a get-together with friends and family this holiday season, or serve as one of the many desserts at Thanksgiving.
