The eight-inch sausage in the po-boy sandwich ($3.99) at Frenchy's (3919 Scott, 713-748-2233) wears its Creole heritage on its sleeve. It's bold, brash, hot and spicy and, like everything else on the menu, it's been kicked up quite a few notches. The incredibly moist sausage, which comes on a soft roll, stays hot, while the other ingredients -- lettuce strips, slices of tomato, pickle and a good slathering of mayo -- are as they should be, cold.
