Fajitas at Ninfa's on Navigation: From Prep to Plate

Robb Walsh's recent feature on the dubious origins of most fajitas eaten in restaurants today sent Houston Press photographer Troy Fields on an interesting journey to the original Ninfa's on Navigation, to photograph the entire process of prepping their famous fajitas. The meat used at Ninfa's is unmarinated, certified Hereford skirt steak that is lightly seasoned with soy sauce, salt and pepper while on the grill.
