Love Ya Sugar Cane: Refining Sugar the Old-Fashioned Way

These photos, taken at the Heritage Festival in Henderson, show the process of deriving syrup from sugar cane stalks using a vintage mill. Cane syrup and sorghum syrup were the most common sweeteners in Texas before the creation of the food-safety laws. The small outdoor farm mills where these syrups were produced were eventually regulated out of existence. You can see an this process at the Heritage Festival in Henderson once a year.
