“Crawfish sausage in a pita with sauteed onions. YUM.”
Crawfish sausage is made from a mixture of crawfish tails, pork and spices. The crawfish sausage in the picture is the brainchild of John “JP” Price, who owns the Texas Cajun Sausage Company based in Leakey. Price has a trademark on his crawfish sausage, which he calls CrawLinks. You can order his famous CrawLinks online or visit JP himself at one of the many Texas-based festivals he attends.
