Houstonโ€™s bagel game just got a serious upgrade. Tri-State Bagels opened in Old Town Spring this May, slinging hot, fresh, East Coastโ€“style bagels โ€” boiled, baked and built to satisfy the crusty-outside, chewy-inside crowd.

The shop leans into Old Town Springโ€™s gritty charm, with a flame-painted sign out front and a stripped-down interior that keeps the focus on the bagels โ€” and the free schmear samples. Owners Maria and Joe Macriโ€” the industry vets behind The Black Sheep Bistro, The Italian Joint and Elm & Magnolia โ€” are channeling their New Jersey and New York roots into every hot-out-the-oven batch.

What makes these bagels legit? Each one is boiled and baked the traditional way, with barley malt syrup in the dough to develop that signature glossy crust and dense, springy crumb. Itโ€™s a small detail that makes a big difference โ€”ย delivering that iconic, chewy bite that’s hard to find outside the tri-state area.

Order at the self-serve kiosks, but not before snagging a few samples. The menu hits all the bagel shop hallmarks โ€” everything, sesame, garlic, cinnamon raisin โ€” plus riffs like jalapeรฑo cheddar, truffle-parm and blueberry. Schmears run from plain and scallion to a surprising sweet miso. There are breakfast sandwiches (yes, thereโ€™s Taylor ham), lox-packed classics and even sweets like cannoli and carrot cake.

We went all in on a dozen, paired with tubs of cream cheese and a few pizza bagels for the road. By the time we got home, they were still warm, no toaster needed. My go-to? Everything with scallion cream cheese on one half, veggie on the other, heavy on the nostalgia. Could the bottom half have used more seasoning? Sure. Will I be back tomorrow? Absolutely.

Bonus: theyโ€™re now slinging New Yorkโ€“style pizza by the slice and the pie every day theyโ€™re open. Online ordering is live, too; so folks have no excuse not to load up.
