Walsh traveled throughout the state gathering information for the title. He worked as a deckhand on a shrimp boat in the Gulf, went mayhaw-picking in the Big Thicket and was a judge in a chuck wagon cook-off, all in the name of research. Along the way, he collected vintage photos, almost-forgotten recipes, and anecdotes from cooks, restaurateurs, historians and food fans.
Once he was back home in Houston, Walsh started testing out recipes and putting together Texas Eats.
