Walsh traveled throughout the state gathering information for the title. He worked as a deckhand on a shrimp boat in the Gulf, went mayhaw-picking in the Big Thicket and was a judge in a chuck wagon cook-off, all in the name of research. Along the way, he collected vintage photos, almost-forgotten recipes, and anecdotes from cooks, restaurateurs, historians and food fans.
Once he was back home in Houston, Walsh started testing out recipes and putting together Texas Eats.
The book covers everything from the most time honored Texas grub, like the King Ranch casserole, to the latest in Lone Star eating, like Viet-Texas fusion. Cajun, German, Czech, Mexican, Vietnamese, and Pakistani influences are all covered.
