Robb Walsh: Texas Eats

We admit we have a soft spot for cookbook author Robb Walsh; he was the Houston Press food critic for several years before striking out on his own as a full-time author and restaurant owner. But even if we didn’t know him and his award-winning writing (Walsh has three James Beard Awards), it would be hard not to gush over his new book, Texas Eats.

Walsh traveled throughout the state gathering information for the title. He worked as a deckhand on a shrimp boat in the Gulf, went mayhaw-picking in the Big Thicket and was a judge in a chuck wagon cook-off, all in the name of research. Along the way, he collected vintage photos, almost-forgotten recipes, and anecdotes from cooks, restaurateurs, historians and food fans.

Once he was back home in Houston, Walsh started testing out recipes and putting together Texas Eats. The book covers everything from the most time honored Texas grub, like the King Ranch casserole, to the latest in Lone Star eating, like Viet-Texas fusion. Cajun, German, Czech, Mexican, Vietnamese, and Pakistani influences are all covered. Listen to some of Walsh’s fascinating stories, then get him to sign your copy of Texas Eats today at 7 p.m. Blue Willow Bookshop, 14532 Memorial.
