Over the course of the next few months, I'm counting down 100 of my favorite Houston dishes. I chose some because they are such quintessential Houston creations, others for their cultural or historical significance, and others because they are just so damn tasty. #53 Beef Tips at Davis Meat Market on Lockwood
At Davis Meat Market in the Fifth Ward, $8 gets you enough falling-apart-tender beef tips in thick brown gravy over rice to feed a medium-size family. Then you get two sides. I like the sweet orange mashed yams and the cooked-to-death cabbage, but there are lots of other choices in the steam table. Many people prefer the succulent oxtails at Davis Meat Market. When you try to pick one up, the meat just slips off the bone. Like the beef tips, the oxtails are served in a deep brown gravy over white rice, and the portion is huge.
All Davis Meat Market meals come in a Styrofoam container. That's because most people take their food to go. There is actually one small table in the back of the store, but Davis Meat Market is not the most inviting place to dine. For security reasons, you have to push a buzzer to get in the front door. And it's a little dark and disorganized inside. But the dark and antiquated atmosphere is also endearing. The giant bottles of pickled pig's feet and baggies of crispy cracklins on top of the tall meat counters might remind you of an old-fashioned country store out in the backwaters of the bayou.
James Davis runs the meat market along with his wife and sons. He's a talented sausage maker. Try the country-style breakfasts with Davis Meat Market's housemade pan sausage. And be sure to get some homemade beef and pork link sausage, boudin, spicy hog's head cheese and summer sausage to take home.
