Greg McCabe has a keen eye for a good location — which makes sense, since he was in commercial real estate for a few years before opening his new Absolve Wine Lounge (920 Studemont, 281-501-1788). "I have lived in the area for the past four years, and I've watched it grow," he says. "I looked at 50 properties before settling on this one, because this one had ample parking." McCabe originally wanted to create "a lounge with a relaxing atmosphere, where people can come in and get away from it all."
He hadn't focused much on the food aspect, but then he met a couple of guys who had lots of kitchen experience. They're now turning out some interesting snacks and appetizers, and McCabe plans to expand the menu further. Dish enjoyed the Sinful Cheese Board, which consisted of three unusual cheeses, a drunken goat gouda, an Irish white cheddar and a soft and creamy cambozola, served with dried fruit and nuts. We only wished there had been a little more of each. At $7 a glass, the Essencia San Telmo Cabernet from Mendoza, Argentina, was the perfect match for the cheese plate.
