We are in search of Houston's best sandwiches because we love sandwiches and we love Houston!

A grilled cheese is one of life's simplest and most wonderful pleasures. I've written about one in this space previously (from Tout Suite). You can't really have too many great grilled cheese sandwiches on a list like this one, but I would have been loathe to add another until I had the Grilled Cheese (how it is on their menu) from the brand new Classic All-Day, 5922 Washington Ave.

It shouldn't come as much of a surprise the people here know how to put together two pieces of bread. They are the same folks behind Local Foods, home of the "Crunchy" Chicken, one of the first sandwiches on this list way back in February (they also own the Houston stalwart Benjy's).

And this is more upscale fare (even with only an $8 price tag), but not in a fussy sense. To be honest, it's a bit of a stretch to call this a grilled cheese given that it does have meat on it. But, who cares when it is this good.

Crispy bread, griddled on the flat top, is filled with both Hooks cheddar and pimento cheese. Frankly, I'm surprised pimento hasn't made more of a comeback. The blend mixes the sharpness of the cheddar with the moderately salty and creamy pimento. That might be enough, but Classic adds kosher salami and pickles. For all the years I've eaten grilled cheese sandwiches (and believe me, I've put away plenty of them), pickles never even crossed my radar. But, it's a revelation.

The brine-y pickles mixed with the saltiness of the salami adds just the right note and cuts through the fat of the cheese. All those years I had late night grilled cheese at diners with slices of dill pickles on the side, I never thought to put them on the sandwich. I was clearly an idiot.

Classic All-Day just recently opened, but they are already way on top of their sandwich game with this gem.

If you have a sandwich you think is one of the best in town, hit us up. We're always looking for new options.
