The caampechana taco at the El Chilango taco truck is filled with a mixture of chorizo and chopped fajita beef that is fried together and served on a lightly grilled tortilla. The topping of onion and cilantro and the lime wedge is free -- not a bad deal for a $1 taco.
The El Chilango truck is parked at the intersection of Veteran's Memorial and West a few miles south of Beltway 8. Zorrito, the owner, has erected a structure over some picnic tables in the gas station parking lot beside the truck, forming a little outdoor restaurant. There were several other taco trucks on the stretch of Veteran's Memorial just south of Beltway 8 with similar set-ups. The one called El Gran Taco was quite elaborate.
I swear I used to see the El Chilango truck on Longpoint, but there seems to be something of a movement toward the suburbs going on. I was amazed at how many trucks I saw parked on the northern part of Airline recently.
