Texas Traveler: Kirby's Korner in Seguin

This "Kirby burger" set me back a little over eight bucks at Kirby's Korner, a burger joint on Highway 123 Bypass in Seguin. The regular Kirby burger comes with mayo, lettuce, tomato, bacon, mushrooms and Swiss on your choice of a wheat or white bun for $5.29. Curly Cajun fries and onion rings are popular sides.

I got the white bun and added jalapeños. I also upgraded to a double, which got me two six-ounce patties, or two-thirds of a pound. The never-been-frozen, hand-formed burger meat was well-seasoned. They cook all burgers to a pinkish medium here, which is a refreshing change from the overdone ground beef you get at so many Texas burger stands. The bun was buttered and toasted until the edge was crunchy-hard.

It was a stellar burger. The slogan at Kirby's Korner is "Best Hamburger in Texas - Seriously!" And they mean it.
