100 Favorite Houston Dish 2015, No. 44: LH Gumbo at Holley’s Seafood Restaurant & Oyster Bar


Phaedra Cook is eating her way through Houston and counting down her 100 favorite dishes of 2015. It's a collection of personal favorites that is also indicative of Houston dining. It's a scene where a vast range of dishes coexist: highbrow and lowbrow; local and international; cheap and expensive; modern cuisine and beloved tenets — and everything in between.

Holley’s has what may very well be the best gumbo in Houston. It's called LH gumbo after Lennie Hall, who worked with chef Mark Holley at Pesce and at Holley's. (Holley says that Hall is now doing private chef gigs.) 

The key is balance. The roux is dark but not excessively so. It’s cooked to just the right shade of brown to lend silky richness to the broth.

There’s no excessive reliance on okra for thickening, nor is the gumbo overly bolstered by too much Worcestershire sauce. A moderate mound of parsley-flecked rice minds the bottom of the bowl. A touch of spice and sautéed onion and celery brings the broth to life.

That doesn’t even include the goodly amount of seafood and meat. Duck confit makes this gumbo even more luxurious, as do tender cornmeal fried oysters and firm Gulf shrimp.

On a cool or rainy day, a bowl of the LH gumbo is the perfect fit. Everything comes together in a way that’s just right.
