The Pit Room is part of the new guard of Houston barbecue, setting itself apart from the pack with attention to detail and a considered approach to the menu, from surprisingly excellent smoked meat tacos to an array of arresting house-made pickles. The Texas Trinity (brisket, ribs, sausage) can vary in quality, particularly if you go later in the day during dinner service, but brings great flavor and texture when it’s on its game. Don’t miss the pulled pork, which might be one of the best examples in the city.
