This year leading up to our annual Best of Houston issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.
Stella Sola is known as a meat-lover's paradise, primarily for its pork. So it is perhaps odd that my favorite three dishes at the stately Heights restaurant are the bone marrow service (beef), the venison tartare and the lovely dal giardino salad. But do you see that photo above? That is heaven on a plate, folks.
Unlike other restaurants whose bone marrow service is simply a hefty bone sent out whole on a plate, Stella Sola takes the ultra-civilized step of sawing the bone in half (not in front of you, of course; that would ruin the intended civility). This means you don't have to spend the appetizer course of your meal rooting around, caveman-like, for the marrow hidden deep inside the bone's cavity. It also means you don't to bang the thing on the table later, trying desperately to dislodge those last precious bits of meat butter.
And meat butter it is, scooped daintily from the split-in-twain bone and spread onto freshly-baked ciabatta with little other accouterments needed, save a dusting of sea salt and sweet shallots to cut the fatty flair. The marrow service takes 15 minutes to prepare and costs $15, small prices to pay for such an elegant affair.
