This year leading up to our annual Best of Houston issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.
Samba Grille made the smartest decision of its year-long life when it discontinued the rodizio service it had initially started out with, and focused instead on the single plates coming out of the highly creative kitchen.
Since then, the menu has blossomed into one of the most interesting and underrated in the city, featuring dishes like a tuna sashimi tiradito with nuanced rocoto peppers and a housemade sorbet, or a corn bisque sango that's almost impossibly creamy but punched up with sweet snaps of large, white kernels of choclo. Samba's wonderful calamari features whole, buttery squid legs -- no rubbery rings here -- and its fat, caramelized squares of roasted pork belly in a tamarind glaze are a sight to behold.
That tamarind glaze is also put to use on my favorite dish here, a simple pillow of salmon set on a bed of striking black quinoa. The sticky-sweet tamarind glaze -- nudged along with a green mango sauce -- has a subtle fruitiness to it that brings out the sweetly nutty notes of the quinoa. I always find myself scooping up both salmon and quinoa in one bite, letting the flavors bounce around happily on my tongue, until the plate is completely clean.
Although it's not available on Samba's popular $19 three-course lunch menu (buttery sunfish is, though!), the salmon is one of the most affordable items on the dinner menu. And the friendly, efficient service means that it's also my favorite spot downtown before a night at the opera (or the Alley or the ballet or the Astros game).
