This year leading up to our annual Best of Houston issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.
I wasn't expecting a simple bowl of lobster bisque to be the standout of a very full meal on my first visit to Philippe, but it's always a welcome surprise when it's the simple things that stand out. The bisque's $9 price tag means that it's an affordable bit of luxury, too, as are many of the items on Philippe's accessible and highly egalitarian menu -- a rarity for an upper-crusty Galleria-area restaurant, to be sure.
The first indication that this was more than just a standard bowl of bisque came in the form of the cod quenelle that sat atop the soup. "It's the size of a tamale!" my dining companion wondered aloud. (For sake of comparison, the little oval of a regular quenelle is made using two regular table spoons; this quenelle looked as if it had been delicately formed by a large man's hands.)
The second and best indication that this was no mere bisque was the fact that -- unlike a high-fat, ultra creamy bowl of bisque -- this was primarily lobster and lobster stock, emulsified with only a touch of cream into a frothy bowl of pure lobster bliss. It tasted mostly of the buttery sea, the cream never taking over as the primary flavor. I wanted to lick the bowl, but remembered my manners. After all, I don't think the other well-heeled diners would quite approve.
