This year leading up to our annual Best of Houston issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.
What I love most about chef Randy Evans's cooking at Haven is that it's the kind of instantly recognizable stuff I grew up eating -- solid, down-home, East Texas food like field peas, tomatoes, peaches, grits -- re-envisioned without any sense of pretense or disingenuousness. You can tell that Evans respects his ingredients and their sense of place, that he's not simply battering chicken livers because it's the trendy thing to do.
And these chicken livers are good enough to turn even the most devout liver hater into a passionate defender of the chicken's most noble offal offering. Fried up like gizzards from a highway gas station, the livers have a thick, crunchy outer coating that manages to not crush the delicate liver inside -- a feat in and of itself. Underneath are small coins of buttered biscuits covered with an andouille sausage-studded gravy that tastes like it came right out of an old, cast-iron skillet (yes, that's a very good thing).
You're in luck during Houston Restaurant Week (which runs through August 31); Haven has these livers on its HRW dinner menu as part of its $35 three-course offering. Of course, you could always just do what I do: order the $9 livers and the $5 grilled okra -- another of Haven's best dishes -- and make an inexpensive, homey, yet fabulously elegant dinner out of it at the bar.
