100 Favorite Houston Dishes 2015, No. 14: Rabbit Loin at BCN Taste & Tradition


Phaedra Cook is eating her way through Houston and counting down her 100 favorite dishes of 2015. It's a collection of personal favorites that is also indicative of Houston dining. It's a scene where a vast range of dishes coexist: highbrow and lowbrow; local and international; cheap and expensive; modern cuisine and beloved tenets — and everything in between.

BCN Taste & Tradition’s Rabbit Loin with Porcini Bomba Rice is just one example of their many beautifully-plated, delectable entrées. It’s especially interesting because there aren’t a whole lot of dishes that use rabbit—especially not as successfully as this.

Chef Roger Luis says the Rabbit Loin is likely to be available for quite some time, because it is his grandmother’s recipe. The accompaniments are apt to change with the seasons, though, and the current incarnation has distinct cold weather flavors, like caramelized onion and pumpkin.

The meat is lightly seared and then cooked sous vide for three hours to achieve tenderness without sacrificing moisture. It’s accented with caramelized onion and garlic marmalade and laid atop a neat round of bomba rice cooked with seared porcini mushrooms. Alongside are spry, roasted wedges of fresh artichoke hearts—a nice pairing for the papery texture as well as the subdued flavor. 

It’s a hearty, elegant meal and all that's really needed alongside is a glass of one of BCN’s many Spanish wines.
