Phaedra Cook is eating her way through Houston and counting down her 100 favorite dishes of 2015. It's a collection of personal favorites that is also indicative of Houston dining. It's a scene where a vast range of dishes coexist: highbrow and lowbrow; local and international; cheap and expensive; modern cuisine and beloved tenets — and everything in between.

Okay, I cheated a bit with the name to avoid a two-line headline. The real name in Italian is a mouthful: risotto alla parmigiana con vitello brasato alla milanese e gremolada. Here's the translation: Milanese-style braised veal with Parmesan risotto and gremolata.

It’s really hard to find good risotto and annoying that so many dishes called that on menus bear a closer resemblance to rice pilaf. Mascalzone is serving real risotto, and this one, topped with what’s essentially a veal stew, is the heartiest and most flavorful. It’s real comfort food.

The key is the rice. Good risotto requires that the rice have the kind of starchy exterior that releases its thickening power when it’s cooked slowly and stirred often. That’s what gives risotto its hallmark trait of creaminess. Done right, it’s time consuming and requires a lot of patience. It’s the kind of dish that’s difficult for restaurants to do properly in a fast-paced setting.

Chef Alberto Baffoni, who was there for our original review, is no longer with Mascalzone. He’s moved to Bistecca Ristorante, a new Italian steakhouse at 214 Westheimer.

A recent visit revealed that Mascalzone’s menu is still the same, though. There are two locations in Houston: 1500 Shepherd near Washington Avenue and the original in the Westchase area at 12126 Westheimer.
