Phaedra Cook is eating her way through Houston and counting down her 100 favorite dishes of 2015. It's a collection of personal favorites that is also indicative of Houston dining. It's a scene where a vast range of dishes coexist: highbrow and lowbrow; local and international; cheap and expensive; modern cuisine and beloved tenets — and everything in between.

In far north Houston, in a nondescript shopping center, resides Le’ Pam’s House of Creole. Inside, it's all decked out in purple and gold, making it Mardi Gras all year round.

Sundays are special at Le’ Pam’s, because that’s the day chef Pamela Graham pulls out the good china and makes stuffed Cornish game hens and oxtails.

Her oxtail is incredibly succulent, with the thick chunks of silky meat literally falling off the bones. The long-grained rice underneath captures all the slivers of soft meat and the jus as they’re pulled away and fall apart. Sides of greens and sweet potatoes are excellent companions.

The only way to finish such a soulful meal, of course, is with the excellent bread pudding with brandy sauce.

Le’ Pam’s House of Creole is open on Sundays only between 11 a.m. and 4 p.m., so make sure to plan accordingly to be able to try the oxtail.
