Great French onion soup takes time and chef John Sheely at Mockingbird Bistro never rushes it. The key to the great depth of flavor is slowly bringing the natural sugars of sweet yellow onions. (Texas 1015 onions work great when they’re available.) It’s a process that cannot be rushed. Cooked too fast, the onions would char and that would discolor the stock.
Mockingbird Bistro's onions turn a gorgeous shade of mahogany. Then, just enough stock is added to bring them together. The end result is neither too soupy nor too thick.

Next, it's time for the soup to get dressed up. It’s topped with a few Parmesan crostini and a thick layer of gruyere. Finally, the whole stoneware crock goes under a broiler until the cheese melts and the crostini get toasty. The velvety end result is a study in balance between savory and sweet; comforting warmth and luxury; simple and complex.
