Common Bond Bakery & Cafe is so much more than just beautiful kouign amanns, 33-layered flaky croissants and those ooey gooey chocolate chip (more like chunk) cookies. The newly established eatery on Westheimer also has a savory selection that is absolutely mouthwatering. While those plates change every week, you can only enjoy them until 3 p.m. as Common Bond does not offer a dinner service. But, on Monday, October 6, you might have the chance to see what it's like to dine in the evening at Common Bond during its first pop-up dinner.
"It's more or less a test just to see how we will be able to operate dinner out of our kitchen and then do service in the dining room," manager Bradley Wilcox says. "It's a pre-ticketed, pre-paid coursed dinner with optional wine pairings. Our chef de cuisine has pulled together a menu; it's pretty finalized at this point and it's [listed] on our website."
The meal costs $75 per person and includes an optional wine pairing for an additional $30. The five-course dinner will be served family-style. So, depending on the number in your party, your table will receive enough servings to feed each person.
Wilcox explains that chef de cuisine David Morgan and his sous chefs collaborated to create this menu featuring ingredients they enjoy to use and ones that are in season, just like all of the savory offerings at Common Bond.
The dinner kicks off with a bread amuse-bouche, followed by in-season market vegetables. For the third course, guests will enjoy a seafood pasta dish of pan-roasted oysters with barchetta pasta, which are boat-shaped pasta shells. The fourth and final savory course focuses on red meat -- pork shank served with vegetable ragu and beans. Dessert pairs two classic sweets, apple pie and vanilla ice cream, but in an elevated fashion (this is Common Bond after all). Instead of a traditional slice of apple pie served with a generous scoop of Blue Bell vanilla ice cream, guests will dive into an apple pot pie paired with creamy vanilla gelato.
Common Bond's pop-up dinner will seat approximately 120 guests throughout the night.
"We can only really seat about 60 people at a time in the dining room; a lot of our dining area is bar seating and we're trying to avoid bar seating for this test dinner service," he says. "We're kind of inner spacing it throughout the seating time. It won't be like a traditional coursed dinner where we have a 6 o'clock seating and people sit down then the chef comes out, talks about the menu. It's more like we're only counting on turning each table twice, so we're spacing reservations throughout the evening."
Wilcox explains that this pop-up is simply a trial run to see if offering dinner will be possible for the kitchen. There's no guarantee that the cafe and bakery will add an evening meal service even if this pop-up is successful.
"The truth is we may never do dinner service, or it may be month to month now. But, I think it's partially as a testing the waters and partially just for fun," Wilcox says. "We're trying to just keep low key, test the waters. That's why we're doing it ticketed just so we don't have a massive turn out, that way we can control the environment a little better and we can live up to the standards of service that we want to be able to achieve."
