Recently, McCormick & Schmick's latest location in the Town & Country Shopping Center (791 Town & Country Blvd.) hosted a Chef's Dinner to promote its new concept of "perfect combinations." Perfect combinations is a different way of eating that allows guests to choose two or three small portions of different menu selections to create their own customizable entrée.
M&S is known for having outstanding oysters which are grown specifically for the restaurant. Our first perfect combination was a selection of three different oysters cooked three different ways. There was the oyster on the half shell with zingy grapefruit mignonette, a Serrano ham-wrapped, cedar roasted oyster with serrano pepper hollandaise, and a Bienville-style oyster with Texas Blue Crab. Each was truly superb, and the variety added interest to the starter.
The other courses showcased the same idea: similar proteins prepared in various ways that all worked well together. The beef course was mouthwatering. Sitting side by side were Yoakum Texas Akaushi Beef served in a corn husk with sweet corn maque choux and filet mignon oozing with Deep Ellum Blue Torchon cheese, sitting atop a griddled hash brown potato. The meat was perhaps the tenderest beef I have ever tasted.

I was pleasantly surprised to learn that although M&S is a large chain restaurant, each location is careful to utilize local, seasonal ingredients as much as possible. Despite the extensive scale of the company, it was clear that attention to detail had not been lost.
