Robb Walsh's 100 Favorite Houston Dishes: #11 Crispy Pork Belly with Steen's Cane Syrup at Catalan

Over the course of the next few months, I'm counting down 100 of my favorite Houston dishes. I chose some because they are such quintessential Houston creations, others for their cultural or historical significance, and others because they are just so damn tasty. #11 Crispy Pork Belly with Steen's Cane Syrup at Catalan

Pork belly, the fatty meat slab that bacon is made from, skyrocketed in popularity over the last ten years. And the appetizer called "crispy pork belly with Steen's syrup" at Catalan Food & Wine Bar on Washington Avenue is the best pork belly presentation in the city. To eat it, you grab the stout little splinter of sugar cane that's stuck through the middle of one of the cubes of fatty pork, then bite into the loose layers of crunchy meat and hot fat and try not to let any of the pork grease or cane syrup run down your chin. It might remind you of pancakes with thick bacon and country syrup -- only without the pancakes.

Steen's is one of the last producers of pure cane syrup, which is produced by crushing ribbon cane and cooking down the cane juice in open kettles. Cane syrup was once the most common sweetener in East Texas. Sadly, in the last half century, it has been replaced by corn syrup. In Shepherd's pork belly with cane syrup appetizer, you can taste the flavors of a bygone era.

Catalan's Chris Shepherd is the Godfather of Pork Butchers. As detailed in the recent feature "Designer Meats," he was one of the pioneers who encouraged local farmers to grow heirloom breeds of pigs for Houston restaurants. Atkinson's, Revival Meats, Hatterman and Jolie Vue are among the small pig farms he supports. If Shepherd starts teaching pig butchery classes as he has promised, I intend to be among his first students.
