Over the course of the next few months, I'm counting down 100 of my favorite Houston dishes. I chose some because they are such quintessential Houston creations, others for their cultural or historical significance, and others because they are just so damn tasty. #29 The Cheeseburger at Christian's
The tissue paper is wrapped more tightly on the lower side so that the buns part slightly to reveal the colorful lettuce, tomato, cheese and jalapeños within. The corners of the tissue paper face forward and then double back so that the burger seems to be emerging from the center of a flower blossom.
The top bun bears the dark charred circle of griddle-toasting. The hand-formed patty is made from your choice of a third-pound or half-pound of never-frozen, freshly ground beef. The produce is fresh, and the jalapeños come from Cajun Chef in St. Martinsville. I like my burger meat a little closer to medium rare, but that's a quibble. The cheeseburger at Christian's is among the best in the city.
