"Carnitas on normal corn tortillas."
Carnitas are the tender chunks of braised or roasted pig shoulder, popular in Mexican cuisine. Traditionally served on tortillas (as seen above) with a sprinkling of white onions, cilantro and salsa verde, carnitas are a cheap and flavorful meal -- especially when obtained from a local taco truck. Our photographer wanted to create his own carnitas at home, however. His recipe, along with more photos, can be found here.
