The Waffle Bus's menu proffers many, many enticing options that would easily satisfy my brinner cravings on any given day. Only one thing is missing: waffle ice cream sandwiches. They have burgers in between waffles. And smoked salmon and dill cream cheese. Also Nutella and bananas. Clearly, there's no objection to the waffle/filling/waffle sandwich structure. Just please, Waffle Bus, add ice cream (preferably mint chocolate chip) to that list of sammie fillings. Maybe you've considered it? Well, stop waffling, and go for it. Har.
In the meantime, I will construct my own waffle ice cream sandwiches at home. And you can too if you are similarly longing for that magical combination of ice cream and breakfast carbohydrates. Granted, some restaurants offer a scoop of vanilla on a Belgian waffle, but that dish in no way compares to the sumptuous striation that is waffle on top of ice cream on top of waffle (with possibly some toppings in between.) Assembling your own waffle ice cream sandwich can be as easy (or, some would argue, as vulgar) as buying toasting frozen waffles and adding store-bought ice cream. Because I have a better track record making waffles at home than I have making ice cream, I like to make the former from scratch and buy the latter at the store. As for flavor pairings, here are my recommendations:
