The classic cheesy nacho chips known as Doritos have been used in various ways over the years. Most recently, Taco Bell has transformed their signature taco shell into a Dorito taco shell...still not too sure about that one. But this week on Pinterest, I stumbled upon a casserole dish using Doritos.
Sure, it's a little out there, but that's the beauty of Pinterest! These recipes that seem strange are usually pretty dang good.
This blogger's recipe turned out to be surprisingly delicious, so I'll show you how to make it.
The one thing I love about making casseroles is that they are extremely simple to put together. Basically, mix all of the ingredients together and pour in a pan to bake.
This casserole calls for two cups of shredded cooked chicken, so to save time I bought a rotisserie chicken at the grocery store, peeled off the skin and shredded the chicken meat. You can cook your own chicken breasts if you would like, but if you're like me and love the smell of a rotisserie chicken, then by all means use one of those instead.
Once you have shredded the chicken into pieces, start adding the rest of the ingredients.
- 1 cup shredded cheese (I used Colby Jack)
- 1 can cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 can Ro*tel tomatoes (with jalepeños -- mild)
- 1/2 packet taco seasoning
Mix all of these ingredients together and you're ready to assemble the casserole. This is where the Doritos come in.

Crush a layer of Doritos on the bottom of a greased 9-by-13-inch pan. Then pour a layer of the casserole, top with another layer of crushed Doritos and finish with a layer of the creamy chicken casserole. Top the casserole with some more cheese and cover with aluminum foil, then bake for 30-35 minutes at 350 degrees.
It's creamy and extra cheesy with the crispy Doritos in each layer. Each bite comes with a little crunch from the Doritos, which is a scrumptious treat combined with the cheese and chicken.
