Raise your hand if you have ever eaten raw cookie dough before. That should be just about everyone. What if there was a way you could eat raw cookie dough without the guilt of eating raw eggs?
This week, I found a recipe that shows how to turn regular cookie dough into frosting to top cupcakes and cakes -- you could probably stuff it between two cookies for an ultimate cookie sandwich, too.
At first, I was a little skeptical with this recipe because I didn't think that it would turn out as fluffy and creamy as frosting. However, the magic of an electric hand mixer made this "frosting" the perfect consistency to top cupcakes and cakes.
First, add one cup plus one tablespoon of all-purpose flour into a large mixing bowl, followed by 1/2 teaspoon of salt. Omit the baking soda because it is needed to make the cookies rise while in the oven. You're not baking this cookie dough, so no need for the leavening agent.
If you would rather make a sweeter frosting (it will be sweet with the flour), add powdered sugar as the base, instead. However, I recommend reducing the amount of granulated sugar and brown sugar.
Next, add one stick, or 1/2 cup, of softened unsalted butter, followed by 1/3 cup of granulated sugar and 1/2 cup of packed brown sugar. Cream the butter, sugars, flour and salt until all of the ingredients are completely incorporated.
After you cream those ingredients, add 1/2 teaspoon of vanilla extract and omit the eggs.

I had a difficult time piping the cookie dough at first, because it was too thick to squeeze onto the cupcakes. So, if it is too thick, add about a tablespoon or two of milk to make the mixture thinner. Then, use your electric mixer to beat all of the ingredients together and create a whipped cookie dough.
Top the "frosting" with chocolate chips for a classic chocolate chip cookie dough frosting, or add sprinkles, raisins, nuts, peanut butter chips or your favorite candy pieces for a little variety. You don't add those ingredients when turning the cookie dough into frosting, so you can add a multitude of toppings to each cupcake easily.
