Below is an updated version of the Peking duck bun seen in so many Chinatown restaurants. But this mantou is filled with pork belly instead, its fatty edge trimmed out by a thick piece of cracklin' and topped with fresh scallions and tangy plum sauce, and it isn't found in Chinatown.
