At this restaurant, "pork sliders" are a clever combination of Chinese, Japanese and American influences. Hoisin-marinated pork loin is portioned into small, fluffy, bao-like pancakes -- the same pancakes used to eat Peking duck -- then topped with scallions and cucumbers.
