Chef Chat: Melissa Hudnall Explains How You Become a Bug Chef

You won't often find bugs on the menu in Houston, but that's not to say that Houston chefs don't know how to cook them. Still, even though they may know how to cook them up, you're not going to find a lot of folks who refer to themselves as a Bug Chef. There is one local cook, however, that wears the title proudly. Meet Melissa Hudnall, Bug Chef at HMNS, who was kind enough to sit down with us for Chef Chat to share her story. She also makes a pretty good batch of Chex Mix (with crickets).
