A baleada is basically a Honduran taco. At Honduras Maya Café & Bar (5945 Bellaire, 713-668-5002), a thick, wheat-flour tortilla arrives flat on a plate, just begging to be folded over and devoured. You can get them with a variety of fillings; the version we ordered cost three bucks and was con todo, or “with everything,” which included refried black beans, slices of avocado, grated cheese, chunks of beef and scrambled eggs. Since they serve these all day long, it’s like an anytime breakfast-on-the-go.
