Diners mourned when Belly of the Beast shut its doors in 2021 after a buzzy first year on the scene in Old Town Spring; but thankfully, chef-owner Thomas Billie wasn’t done with the hood yet. At the turn of 2023, the Mexican-American chef revived BOTB in bigger, more casual digs, presenting his take on new American cuisine through the lens of his heritage – tuna tostada with uni emulsion and salsa macha, handmade agnolotti kicked up with the flavors of elote, succulent duck breast in cherry mole with house corn tortillas, and the kind of tres leches dreams are made of.
