Celebrate Rosh Hashanah with a Honey-Glazed Apple Walnut Cake

L'shanah Tovah! It's Rosh Hashanah -- the first of the High Holy Days and the Jewish New Year.

Apples and honey are often served as part of the traditional Rosh Hashanah meal, symbolizing a sweet new year. So to celebrate, we're sharing a simple and delicious recipe for apple walnut cake made with fresh apples, toasted walnuts, and a sweet and sugary honey glaze.

Here's how to make it:

Ingredients For the cake

  • 3 cups all-purpose flour, sifted
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp fine sea salt
  • 1 1/4 cup canola oil
  • 3 eggs
  • 3/4 cup light brown sugar
  • 1 cup granulated sugar
  • 1 1/2 tsp vanilla extract
  • 3 Granny Smith apples, cored, peeled and thinly sliced
  • 1 cup chopped walnuts, lightly toasted

    For the glaze

  • 1 cup powdered sugar
  • 2 tbsp honey
  • 2 tbsp non-dairy creamer or water
  • 1/2 tsp freshly grated lemon zest


    Preheat oven to 325 degrees and lightly grease a bundt pan.

    In a medium bowl, mix together the dry ingredients (the flour through the salt).

    In a large bowl, beat together the oil, eggs, the brown and white sugars, and the vanilla extract. Slowly add in dry ingredients and beat until mixture is completely combined and fluffy. Fold in the sliced apples and chopped walnuts.

    Scrape mixture into prepared pan and use a rubber spatula to smooth the top. Bake for 1 hour and 30 minutes or until a toothpick inserted into the cake comes out clean. Let cool in the pan and on a rack for 15 minutes. Invert onto rack and gently lift to remove the mold.

    Meanwhile, make the glaze by mixing all of the ingredients in a bowl.

    Set cooling rack over wax paper for easy cleanup. Drizzle the glaze over the cake and let drip down the sides.
