We’ve been on a tour of Houston Middle Eastern restaurants lately sampling falafel sandwiches and trying to figure out what makes them great. Some Houstonians mix minced jalapeños into the ground chickpeas to make a radically hot falafel. Some people mix in some mashed yams. Others add fava beans. Mark Bittman only used spices that start with a “C’ in this falafel recipe in the NYT.
