I’ve found the best way to crisp up the thick-sliced bacon I picked up at Vincek’s:
You will need a wire rack like the one used for cooling cakes and cookies and a pan to catch the bacon drippings.
Pre-heat your oven to 350 F. Use the convection setting if you have one.
Place a paper towel on the bottom of the pan for ease of clean-up (the paper towel prevents any bacon bits from sticking to the bottom of your pan).
Lay your strips on the wire rack, rest it on top of the catch-pan, and bake in the oven until crisp (about 10 minutes). — Jay Francis
