Robb Walsh's 100 Favorite Houston Dishes: #36 Surf and Turf Salad at Que Huong

Over the course of the next few months, I'm counting down 100 of my favorite Houston dishes. I chose some because they are such quintessential Houston creations, others for their cultural or historical significance, and others because they are just so damn tasty. #36 Surf and Turf Salad at Que Huong

To order the surf and turf salad ask for menu item #303 at Que Huong restaurant at Beechnut and Wilcrest. The Vietnamese name is goi bo tom rau muong. This savory summer meal starts with a pile of watercress and raw vegetables tossed in a light fish sauce and vinegar dressing. The greens and vegetables are topped with cold sliced rare steak and shrimp.

The dish comes with crispy shrimp chips and an extremely funky dipping sauce called mam nem, a concoction of fermented pickled mudfish mixed with pineapple. You can dip the steak and shrimp in the rotting swampwater-scented nectar if you like. Or you can skip that part.

I always used to order #301 on the cold salad menu, the jellyfish salad topped with seafood known as goi sua do bien. This refreshing dish is sometimes called "Summer Delight" or "Seafood Delight." But one time the waiter at Que Huong asked me, "Why do you Anglos always order this salad?" Before I could answer, he advised, "The steak and shrimp salad is much better."

The truth is I like them both. But it was about time I stopped ordering the same salad every time.
