100 Favorite Dishes 2012: No. 23, Lamb at El Hidalguense

This year leading up to our annual Best of Houston® issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.

Although most people think of cabrito when they think of El Hidalguense -- naturally, as it's well-known for roasting whole baby goats on the pit that centers the Long Point restaurant -- my favorite dish here is actually the lamb (although both are considered house specialties here), which is cooked Hidalgo-style. The lamb is also far more accessible for your average diner, as the cabrito verges on expensive unless you're splitting it with a group.

I like to go on Wednesdays, when the lamb is one of the three daily lunch specials. It's listed on the menu as barbacoa de borrego, or lamb barbacoa that's been cooked in maguey leaves. Maguey leaves come from the same plant that produces pulque, but in this application they're used to keep the lamb tender and moist while it cooks. After being unwrapped, the lamb is stewed in El Hidalguense's tart salsa verde that -- while not too hot -- imparts a nice level of heat that cuts the fattiness of the meat.

The lamb is best eaten with some of El Hidalguense's homemade corn tortillas. Don't even go for the flour here, as the corn are such an excellent example of what true corn tortillas should look, feel and taste like. They are the vanguard of corn tortillas, and worth every extra cent you pay for them. Spread a layer of salty beans onto one of the hot tortillas, heap it high with soft lamb and it's almost like you're in Hidalgo itself -- if only for lunch.
