The seemingly weird fusion of Latin American and Japanese cooking actually has a long history in South America. Between the sushi rolls and the Nuevo Latino entrées here, you end up with a wild array of colorful sauces and condiments on the table. It's great fun dabbing and dunking and coming up with new combinations.
