100 Favorite Houston Dishes 2015, No. 42: Duck In Two Moles at Arnaldo Richards’ Picos



Phaedra Cook is eating her way through Houston and counting down her 100 favorite dishes of 2015. It's a collection of personal favorites that is also indicative of Houston dining. It's a scene where a vast range of dishes coexist: highbrow and lowbrow; local and international; cheap and expensive; modern cuisine and beloved tenets — and everything in between.


Mole sauces are fascinating in their complexity, and Arnaldo Richards’s offers several kinds. There’s peanut and chile ancho, mole negro (black mole), pipian sauce with green chiles, tomatillos and pumpkin seeds, mole de ciruela (which includes dried ancho chiles and prunes) and mole coloradito, a red mole that includes tomatoes, dried chiles and chocolate.

The pato en dos moles (or duck in two moles) is an opportunity to try two moles on one plate. Duck breast is bathed in the mild, tart pipian sauce, while the leg quarter is coated in mole de ciruela. The dark, moist meat of the leg quarter is better able to stand up to the richer, deeper flavors of the mole de ciruela.

In the middle is a hefty round of cilantro rice — a little something to temper the rich duck meat. Of course, having one of Picos's famous margaritas on the side doesn’t hurt, either.
